Light recipes for end-of-year celebrations

Hot days and end-of-year celebrations require light recipes. To help you put together a menu, we will be sharing here the recipes of four practical, tasty and unfailing dishes that will make the difference in your dinner.

All of them use Korin organic ingredients and are very healthy.

Check them: chickpea salad, chicken salad, green banana “farofa”, and rice with almonds and rosemary.


Chickpea salad


  • 200 g Korin organic chickpeas
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 5 tablespoons olive oil
  • 1 tablespoon vinegar or lemon juice
  • 1 pack chopped parsley
  • 1 grated small garlic clove
  • Salt and pepper to taste


1. Let the chickpeas soak for at least 8 hours.

2. Cook the chickpeas with water in a pressure cooker for 15-20 minutes. It is important that they remain intact and don’t break down after cooking.

3. Drain the cooking water and, while chickpeas are still warm, add the cumin, coriander, garlic, olive oil, lemon juice, parsley, salt and pepper.

4. Let it cool in the refrigerator overnight to become even tastier!


Chicken salad


  • 700 g Korin organic chicken breast
  • 1 garlic clove
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1 grated carrot
  • 1/3 cup (tea) stalks of celery cut into thin slices
  • 1/3 chopped yellow or red bell pepper
  • 1 green apple cut into small cubes
  • ½ cup (tea) mayonnaise
  • 3 tablespoons olive oil
  • Juice and zest of ½ lemon
  • 1/3 cup (tea) raisins
  • 1/4 cup (tea) toasted and chopped cashew nuts
  • Salt and pepper to taste



Place the chicken in a pressure cooker and cover it with water. Add the bay leaf and garlic and cook it for about 20 minutes. Reserve the broth and shred the chicken while it is still warm.

2. Moisten the raisins with the reserved broth.

3. Place the apple in a bowl and squeeze the lemon juice over it.

4. Add the shredded chicken, carrot, bell pepper, celery, olive oil, and a little salt and pepper. Mix well.

5. Then, add the other ingredients and adjust salt and pepper.

6. Let it cool in the refrigerator overnight to become even tastier!


Green banana “farofa”


  • 2 cups (tea) Korin organic roasted cassava flour
  • 4 green pome bananas
  • 2 garlic cloves
  • ½ chopped onion
  • ¼ cup (tea) olive oil



1. Slice the bananas into half-moon shapes.

2. In a frying pan, stew the sliced bananas until golden brown. It is important that they remain intact and don’t break down after cooking.

3. Add the onion and garlic and stew them.

4. Finally, add the cassava flour. Keep the low heat and mix well to extract the natural juices that remain at the bottom of the pan. Serve it.


Rice with almonds and rosemary


  • 1 ½ cup (tea) Korin organic rice
  • 3 cups (tea) boiling water
  • 1 cup (tea) laminated almonds
  • ½ chopped onion
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1 sprig rosemary


1. In a pan, heat the olive oil and stew the onion with a little salt and pepper until it becomes translucent.

2. Add the rice and mix over low heat. Then, add the rest of the salt.

3. Add boiling water and mix.

4. Leave the pan partially covered and cook over medium heat.

5. When the water evaporates, turn off the heat and cover the pan for about 5 minutes.

6. Fluff the rice with a fork and reserve it.

7. On a baking tray, spread the laminated almonds and toast them until golden brown. Watch for almonds not to burn. Reserve it.

8. In a frying pan, melt the butter. Add the rosemary and mix it.

9. When the butter is golden brown add the almonds and mix it.

10. Turn off the heat and mix the almonds-rosemary with the rice.
