Spring dishes: 3 nutritious and tasty recipes using Korin chicken drumettes

  1. Roasted chicken drumettes with a spring flavor

Ingredients

  • 700 g Korin Boa Pedida (Good Choice) chicken drumettes
  • Olive oil, salt and pepper to taste
  • 1 zucchini cut into cubes
  • 1 carrot cut into slices
  • 10 pitted black olives
  • 10 cherry tomatoes

Method

Season the chicken with the olive oil, salt and pepper. Mix the zucchini, carrot, olives and tomatoes and sprinkle the seasonings over them. Put it in a large bowl, cover with aluminum foil and cook it at moderate oven (180oC) for 50 minutes. Remove it from oven and arrange it in a dish. Serve it.

 

  1. Chicken drumettes in the pressure cooker

Ingredients

  • 700 g Korin Boa Pedida (Good Choice) chicken drumettes
  • Olive oil, salt and pepper to taste
  • Turmeric, cumin and annatto to taste
  • 1 onion
  • 4 garlic cloves
  • ½ red bell pepper cut into thick strips
  • ½ yellow bell pepper cut into thick strips

Method

Season the chicken with the olive oil, salt and pepper. Add the other seasonings (turmeric, cumin and annatto). Stew the chopped garlic cloves and onion with olive oil in the pressure cooker until golden brown. Then, add the seasoned chicken and fry it. Add the bell peppers and put the lid on the pressure cooker. Cook it for 20 minutes after the pan starts releasing pressure. It is not necessary to add water as the meat releases water during cooking. After 20 minutes, turn off the heat and mix it again. Garnish with chopped parsley and green onions before serving.

 

  1. Chicken drumettes with sweet and sour sauce

Ingredients

  • 700 g Korin Boa Pedida (Good Choice) chicken drumettes
  • Olive oil, salt and pepper to taste
  • 1 lemon

For the sauce:

  • 1 chopped onion
  • 4 crushed garlic cloves
  • 2 tablespoons butter
  • 2 tablespoons mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons Worcestershire sauce
  • ½ cup (tea) ketchup
  • 3 tablespoons brown sugar
  • ¼ cup (tea) apple vinegar
  • 1 teaspoon Tabasco sauce

Method

Season the chicken drumettes with the lemon juice, salt, pepper and olive oil. Put them in a bowl covered with a lid and let marinate for 1 hour. Remove the chicken drumettes and cook them in preheated moderate oven for approximately 40 minutes. Turn in half the time to cook the other side until equally golden brown. Remove from oven and serve with the sauce.

Sauce: Stew the garlic and onion in butter. Add the other ingredients and mix well. Let it cook until a thick consistency. Remove from heat and let it cool. Whip the sauce in a blender and serve it over the chicken drumettes.
